Season beef tips with salt and pepper.
In a large pan over high heat, melt butter. Add the beef tips and sear on all sides until browned.
Transfer the seared beef tips to a slow cooker.
In the same pan, add the minced garlic and cook for about 30 seconds until fragrant.
Pour in the beef broth, scraping up any browned bits from the bottom of the pan.
Stir in the Italian seasoning, Worcestershire sauce, and onion soup mix. Bring the mixture to a bubble.
Pour the sauce over the beef tips in the slow cooker.
Cover and cook on low for 6 hours.
Serve hot, garnished with fresh parsley if desired.
Store covered in the refrigerator for up to 4 days; reheat gently on low heat on the stovetop.
