Take your potato and cut it crosswise in 1/8-inch cuts. Then, turn the potato and cut again to create a crosshatch pattern. Be careful not to cut all the way through.
Place the potato in a microwave-safe bowl, cover with plastic wrap, and microwave for 5 minutes to par-cook.
In a small bowl, combine the melted butter, garlic powder, onion powder, paprika, black pepper, and salt. Stir until well mixed.
Place the microwaved potato on a foil-lined baking sheet. Brush the butter and spice mixture all over the potato, making sure to get it into all the cuts and crevices.
Bake at 425°F for about 15 minutes, or until the outside is perfectly crispy.
Serve warm, optionally with your favorite dipping sauce.
Store cooled bloomin' potato in an airtight container for up to 3 days; reheat in a 350°F oven for 10 minutes until warmed through and re-crisped.
Microwaving softens the potato partially, reducing total roasting time and ensuring the interior cooks through while the exterior crisps.
Yes. Prepare and microwave the potato up to 4 hours ahead, then brush with butter mixture and roast just before serving for best crispness.
Sour cream, ranch, garlic aioli, or herb butter complement the savory seasoning. Serve on the side for dipping.
Russet potatoes work best for crispiness due to their starch content, but Yukon Gold potatoes will work with slightly different texture.
The exterior should be golden brown and crispy, and a fork should pierce the center easily without resistance, typically 20–25 minutes at 425°F after microwaving.
