In a medium bowl, mix together the peanut butter and yogurt until well combined.
Scoop the mixture onto a parchment-lined baking sheet, forming two oval-shaped mounds.
Insert a popsicle stick into the bottom of each mound.
Freeze the bars for at least 2 hours, or until completely solid.
Once frozen, melt the chocolate chips in a separate bowl.
Dip each frozen peanut butter bar into the melted chocolate, ensuring it's fully coated.
Place the chocolate-coated bars back on the parchment paper and return to the freezer for a few minutes to allow the chocolate to set.
