Split the pitted dates open lengthwise, but not all the way through, creating a pocket.
Fill each date with about 1/2 teaspoon of cookie butter or granola butter.
Place the dark chocolate chips in a small microwave-safe bowl and microwave for 45 seconds, or until melted. Be careful not to burn the chocolate.
Stir the melted chocolate until smooth.
Spoon the melted chocolate over the top of each stuffed date.
Place the dates in the freezer for a few minutes until the chocolate has hardened.
