To your slow cooker pot, add the cubed chicken, diced onion, sun-dried tomatoes, minced garlic, paprika, dried Italian herbs, fresh basil, salt, and pepper.
Pour in half of the chicken stock (about 2 cups) and stir to combine.
Cover and cook on high for 3-4 hours or on low for 8 hours.
After the initial cooking time, stir in the Dijon mustard or pesto, if using.
Add the uncooked orzo pasta and the remaining 2 cups of chicken stock. Stir well.
Cover and cook on high for another 45 minutes, or until the orzo is tender and has absorbed most of the liquid.
Stir in the cream cheese until it melts into a creamy sauce.
Add the remaining fresh basil or spinach and stir until just wilted.
Serve immediately, garnished with grated Parmesan cheese and extra fresh basil if desired.
