Place bacon strips in a single layer in a cold skillet.
Pour about 2 tablespoons of water over the bacon, just enough to cover the bottom of the pan.
Turn the heat on and bring the water to a simmer. The water will help the bacon fat render slowly and evenly.
Cook until the water has completely evaporated. The bacon will then begin to fry in its own rendered fat.
Continue to cook, flipping the bacon occasionally, until it reaches your desired level of crispiness.
Remove the cooked bacon from the skillet and place it on a paper towel-lined plate to drain any excess grease before serving.
