Preheat your oven to 450°F (232°C). Place a stick of butter in a square baking dish and melt it in the microwave for about 1 minute.
In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, salt, and cayenne pepper.
Add the diced ham and shredded cheddar cheese to the dry ingredients and toss with your hands to coat everything evenly.
Make a well in the center of the flour mixture and pour in the buttermilk. Stir with a spatula until just combined into a thick dough.
Transfer the biscuit dough into the baking dish on top of the melted butter.
Gently spread the dough to the edges of the dish. The butter will pool around the sides.
Using a paring knife, score the dough into 9 equal squares.
Bake at 450°F for 15-20 minutes, or until the biscuits are golden brown and cooked through.
Remove from the oven and let cool for a few minutes. Drizzle with hot honey before serving, if desired.
