Dice the bell peppers and onion.
Add the diced vegetables to a hot skillet or wok and sauté until softened.
Add the minced garlic and cook for another minute until fragrant.
Push the vegetables to one side of the skillet and add the lean ground beef.
Season the beef with smoked paprika, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Break up the meat and cook until about 80% browned.
Stir in the tomato paste, chipotle in adobo sauce, lime juice, and honey. Mix everything together and continue cooking until the beef is fully cooked.
Lay out a tortilla and add a portion of the beef mixture to the center.
Top with optional shredded cheese.
Fold the sides in and roll tightly into a burrito.
Place the burritos seam-side down in a pan over medium-high heat.
Cook for a few minutes per side, until all sides are golden brown and crispy.
To make the dipping sauce, combine non-fat Greek yogurt, light mayonnaise, honey, and chipotle in adobo sauce in a small bowl.
Add a small amount of water to thin the sauce to your desired consistency and mix until smooth.
Serve the warm burritos with the chipotle sauce for dipping.
