In the basin of a slow cooker, combine soy sauce, honey, sriracha, hoisin sauce, minced garlic, and cornstarch. Whisk until the cornstarch is dissolved and the sauce is smooth.
Add the chicken thighs to the sauce, turning to coat.
Top the chicken with the sliced red bell pepper and red onion.
Place the pats of butter over the chicken and vegetables.
Cover the slow cooker and cook on low for 5 hours, or until the chicken is cooked through and tender.
Remove the cooked chicken from the slow cooker and place it in a separate bowl.
Shred the chicken using two forks.
Return the shredded chicken to the slow cooker and stir it into the sauce.
Meanwhile, cook the ramen noodles in a separate pot according to package directions. Discard the seasoning packets and drain the noodles well.
Add the cooked and drained noodles to the slow cooker with the chicken and sauce.
Toss everything together until the noodles are fully coated.
Garnish with sesame seeds and chopped green onions before serving.
