Heat your rusty griddle. The creator notes her griddle is becoming hot as she begins.
Ensure the griddle surface is wet. Use a grill stone (or pumice stone) to scrub the entire surface, removing the rust. The combination of heat, water, and scrubbing will lift the rust off.
Once you're satisfied with the amount of rust removed, wipe the surface with paper towels to remove the rust debris.
Pour fresh water onto the hot griddle to steam clean it.
Use a metal scraper and paper towels to push the dirty water and any remaining debris off the griddle surface.
Pour a thin layer of avocado oil onto the clean, hot griddle.
Using a wad of paper towels, carefully spread the oil into a thin, even coat across the entire griddle surface.
Close the griddle lid and let the oil heat up and polymerize. It will smoke. Let it go for about 15-20 minutes, or until the smoking subsides.
Open the lid and apply a second thin coat of avocado oil, spreading it evenly with paper towels.
Close the lid again and let it heat for another 20 minutes. The surface should become mostly black and seasoned.
Once seasoned, the griddle is ready. Let it cool before storing or turn it to your desired cooking temperature to start cooking.
Keep the griddle dry and store in a cool, dry place. Re-season lightly before storage to prevent rust formation.
