In a pan, heat cooking oil and fry the onion rings until golden brown and crispy. Remove from the oil and set aside on a paper towel-lined tray.
On a hot griddle or large non-stick pan, make three small piles of sliced jalapeños.
Top each pile of jalapeños with a handful of shredded cheese. Allow the cheese to melt and form a crispy crust on the bottom.
Place one fried onion ring on top of each cheesy jalapeño pile.
Fill the center of each onion ring with a dollop of cream cheese.
On another part of the griddle, create three more piles of sliced jalapeños and shredded cheese to form the 'lids'. Cook until a crispy cheese crust forms.
Using a spatula, carefully flip the cheesy jalapeño 'lids' on top of the cream cheese-filled onion rings.
Give the entire popper a final flip to ensure both sides are crispy.
Remove the poppers from the griddle and plate them.
Serve immediately with ranch dressing for dipping, if desired.
