Meal Prep Breakfast Bagel Sandwiches

Preheat your oven to 400°F (200°C).

Arrange bacon strips in a single layer on a parchment-lined baking sheet.

Crack one egg into each cup of a 12-cup muffin tin. Use a fork to gently break the yolks.

Season the eggs with salt and pepper to taste.

Place both the bacon and the muffin tin of eggs into the preheated oven. Bake until the bacon is crispy and the eggs are set, about 15-20 minutes.

While the bacon and eggs cook, place the sausage patties in an air fryer and cook at 375°F (190°C) for 8 minutes, or until heated through and crispy.

Toast the sliced mini bagels to your liking.

Assemble the sandwiches. On the bottom half of a toasted bagel, layer a slice of American cheese, a cooked egg puck, your choice of bacon or a sausage patty, and a spoonful of special sauce if using. Top with the other half of the bagel.

Serve immediately, or wrap individually in foil or plastic wrap and store in the freezer for a quick breakfast.
