Spread the ragu sauce evenly over one of the pita breads.
Slice the fresh mozzarella and arrange the slices on top of the ragu.
Grate parmesan cheese over the mozzarella layer.
Spread the pesto evenly over the second pita bread.
Place the pesto-covered pita on top, pesto-side down, to form a sandwich.
Heat the olive oil in a frying pan over medium heat.
Carefully place the pita sandwich in the hot pan and press down gently.
Cover the pan with a lid and cook for a few minutes until the bottom is golden brown and the cheese begins to melt.
Flip the sandwich, cover again, and cook for another 2 minutes until the second side is golden and crispy and the cheese is fully melted.
Remove the pita grilled cheese from the pan, slice in half, and serve immediately.
