Princess Pousse-Cafe

Pro tips

• Pour apricot brandy first, then add half-and-half slowly to minimize separation and ensure smooth blending.
• Chill the glass beforehand; the contrast between cold ingredients prevents the cream from breaking.
• Serve immediately after mixing for the best texture and creamiest mouthfeel.
• Stir gently rather than shake to avoid over-aerating and compromising the drink's silky consistency.

Substitutions

• Apricot-flavored brandy → Peach liqueur or apricot schnapps (drier, more pronounced fruit flavor)
• Half-and-half → Heavy cream (richer, thicker texture) or whole milk (lighter, less indulgent)
• Half-and-half → Irish cream liqueur like Baileys (adds sweetness and spice notes)

Storage & make-ahead

Best served immediately. Do not pre-mix; store brandy and half-and-half separately in a cool place and combine fresh per drink.

Can I make Princess Pousse without half-and-half?

Yes. Substitute heavy cream, whole milk, or Irish cream liqueur (like Baileys) for a different texture and sweetness level.

Should Princess Pousse be served cold or hot?

Traditionally served cold over ice, but can be served as a warm shot by gently heating the ingredients before combining.

What type of apricot brandy works best?

Apricot liqueurs like Bols or Marie Brizard work well; avoid dry apricot brandies, which are too sharp for this creamy drink.

How do I prevent curdling?

Pour the brandy into the glass first, then slowly add cold half-and-half. Avoid heat unless intentionally warming the drink.

Can this cocktail be batched or made ahead?

Mix individual drinks fresh to order. Pre-mixing can cause separation; store ingredients separately and combine just before serving.
