Coat the entire bone-in ham with Dijon mustard to act as a binder.
Season the ham generously on all sides with your favorite BBQ rub.
In the bottom of a slow cooker, add brown sugar, butter, and pineapple juice.
Place the seasoned ham into the slow cooker on top of the sugar mixture.
Pour the honey over the top of the ham.
Cover and cook on low for 6 to 8 hours.
Once cooked, remove the ham from the slow cooker and shred the meat using two forks, discarding the bone.
For the optional glaze, pour the cooking liquid from the slow cooker into a saucepan.
Bring the liquid to a boil and let it reduce by about half.
Add the remaining 2/3 cup of brown sugar to the reduced liquid and stir until it thickens into a glaze.
Pour the finished glaze over the shredded ham and toss to combine.
Serve the pulled ham on sweet Hawaiian rolls or slider buns.
Refrigerate pulled ham in an airtight container for up to 4 days. Reheat gently in a slow cooker on low or in a covered skillet over medium-low heat, adding a splash of broth to restore moisture.

Yes, boneless ham works well and may cook slightly faster. Reduce cooking time by 30 minutes to 1 hour and check for tenderness with a fork.
A 7 lb bone-in ham typically takes 4-6 hours on low heat until the meat shreds easily with a fork.
Yes, cook the ham 1-2 days ahead and refrigerate. Reheat gently in the slow cooker on low for 1-2 hours, adding the glaze just before serving.
Brioche slider buns, dinner rolls, or standard hamburger buns all work well and complement the sweet glaze.
Yes, use a larger slow cooker or two standard ones. A 14 lb ham will need 6-8 hours on low. Keep the glaze proportions the same and adjust only if needed for extra liquid.
