In a medium bowl, whisk together the ketchup, yellow mustard, BBQ sauce, Worcestershire sauce, black pepper, garlic powder, onion powder, paprika, and brown sugar to create the sloppy joe sauce. Set aside.
In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spoon. Drain off any excess grease.
While the beef is cooking, sauté the diced green bell peppers and onions in a separate pan until softened, about 5-7 minutes.
Add the cooked vegetables and the prepared sauce to the skillet with the ground beef. Stir everything together until well combined. Let it simmer for a few minutes for the flavors to meld.
To build the sandwiches, brush one side of each slice of sourdough bread with melted butter.
Place a slice of bread butter-side down on a griddle or large non-stick pan over medium heat. Top with a slice of American cheese, a generous scoop of the sloppy joe mixture, a sprinkle of the shredded cheese blend, and a final slice of American cheese.
Place the second slice of bread on top, butter-side up. Grill for 3-4 minutes per side, until the bread is golden brown and toasted, and the cheese is fully melted.
Remove from the griddle, slice in half, and serve immediately.
