First, prepare the burger sauce. In a medium bowl, combine mayonnaise, ketchup, hot sauce, mustard, Worcestershire sauce, sweet pickle relish, salt, pepper, garlic powder, and paprika. Mix until smooth and set aside.
Preheat a griddle or large cast-iron skillet over high heat.
Place the ground beef balls onto the hot griddle, leaving space between them.
Using a sturdy spatula or burger press, smash each ball down into a thin patty.
Season the tops of the patties generously with your burger seasoning blend.
Drizzle a small amount of yellow mustard onto each patty.
Cook for 2-3 minutes, until a deep brown crust forms on the bottom. Scrape under the patties and flip.
Immediately place a slice of American cheese on top of each patty to melt.
While the cheese melts, toast your brioche buns on a clear spot on the griddle until golden brown.
Assemble the burger. Spread a layer of burger sauce on the toasted bottom bun.
Add a few leaves of lettuce.
Stack two or three cheesy patties on top of the lettuce.
Top with a slice of fresh tomato.
Spread more burger sauce on the top bun, place it on the burger, and serve immediately.
