Ingredients: 5 lbs bone-in, skin-on chicken thighs; 1/4 cup spicy brown mustard; 2 tbsp hot honey seasoning; 2 tbsp roasted garlic and onion powder blend; 2 lbs wood pellets for smoking; 6 cloves garlic, peeled; 2 jalapeños; 1 cup fresh cilantro, packed; salt, to taste; black pepper, to taste; 2 tbsp Greek yogurt; 1/4 cup olive oil

In a large bowl, combine the chicken thighs with spicy brown mustard, hot honey seasoning, and roasted garlic and onion powder.

Mix thoroughly with your hands until all the chicken is evenly coated.

Cover the bowl and refrigerate to marinate for at least a few hours.

While the chicken marinates, prepare the green sauce. Add garlic, jalapeños, cilantro, salt, pepper, Greek yogurt, and olive oil to a blender.
