In a large oven-safe skillet over medium heat, add the ground beef and diced onion.
Sprinkle with taco seasoning and cook, breaking up the beef with a spatula, until the beef is browned and the onion is softened.
Stir in the minced garlic and cook until fragrant, about 30 seconds.
Add the drained corn and the can of diced tomatoes with green chiles. Stir to combine.
Remove the skillet from the heat. Stir in the sour cream, 1 cup of the shredded cheddar cheese, and 1 cup of the crushed tortilla chips until everything is well combined.
Smooth the top of the mixture and sprinkle with the remaining 1 cup of shredded cheddar cheese.
