Preheat your oven according to the garlic toast package directions. Place the frozen garlic toast on a baking sheet and bake until lightly golden.
While the toast is baking, heat a large skillet over medium-high heat. Add the ground beef and diced onion.
Season the beef and onion with BBQ seasoning and cook, breaking up the meat, until the beef is browned and the onion is soft.
Stir in the minced garlic and honey BBQ sauce. Cook for another minute until fragrant and well combined.
Remove the pre-baked garlic toast from the oven. Spoon the BBQ beef mixture evenly onto each slice of toast.
Top the beef with shredded Colby Jack cheese.
Drizzle a little more BBQ sauce over the cheese.
Sprinkle the crumbled bacon over the top.
Finish by topping with crispy fried onions.
Return the baking sheet to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
Remove from the oven, let cool slightly, and serve immediately.
