Can I use a different cut of beef?
Chuck roast is ideal because it becomes tender during slow cooking. Beef stew meat works well too. Avoid lean cuts like sirloin, which can dry out.
How long does this recipe take?
On high: 4–5 hours. On low: 8–10 hours. The longer cook time on low yields more tender beef.
Can I make this ahead?
Yes. Prepare the beef and ingredients in a freezer bag up to 3 months ahead, then thaw and cook in the slow cooker. Store leftovers in an airtight container for up to 4 days.
Why is my gravy thin?
The cornstarch slurry (2 tbsp cornstarch + 1/4 cup water) thickens the gravy. Stir it in during the last 30 minutes on high, or mix extra cornstarch slurry if needed.
