Arrange chicken tenders on a wire rack set over a baking sheet. Lightly spray with oil.
Season the chicken generously on both sides with your favorite sweet and spicy seasoning.
Bake at 375°F (190°C) for about 20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Allow the cooked chicken to rest for 5-10 minutes, then finely chop it.
In a large mixing bowl, combine the chopped chicken with buffalo sauce, queso, hot honey (if using), and chopped cilantro.
Mix until all the ingredients are well combined.
Warm the tortillas on a hot griddle or flat-top pan.
