In a non-stick skillet over medium heat, add the shredded chicken, chopped bacon, and shredded cheese.
Cook until the cheese is melted and forms a single layer.
Place the low-carb tortilla on top of the melted cheese mixture and press down gently.
Place a plate over the skillet and carefully flip it over, so the tortilla is on the plate with the crispy cheese mixture on top.
Slide the tortilla back into the skillet, cheese-side up. Place the pickle spear in the center and drizzle with ranch dressing.
Roll the tortilla up tightly and serve immediately.
