Preheat a pizza oven or similar high-temperature grill to 1000°F (538°C).
Season the picanha steak generously with coarse salt on all sides.
Place the steak on a preheated cast iron pan or steel and carefully slide it into the oven.
Cook for 1-2 minutes per side, rotating as needed to develop an even, golden-brown crust. Be cautious of flare-ups from the rendering fat.
Continue cooking for a total of about 5 minutes, or until the steak reaches your desired internal temperature. Use a meat thermometer to check for doneness.
Carefully remove the steak from the oven and let it rest on a wire rack for 5-10 minutes.
Slice the steak against the grain and serve immediately.
