Using a serrated knife, cut a circle in the top of the bread loaf and hollow it out, reserving the removed bread.
Cut the reserved bread into bite-sized cubes.
In a skillet over medium heat, combine the cream cheese, 1.5 cups of the Colby Jack cheese, diced jalapeños, minced garlic, ranch seasoning packet, and half of the crumbled bacon.
Stir the mixture continuously until the cheeses are melted and all ingredients are well combined.
Pour the hot dip into the hollowed-out bread bowl and spread it evenly.
Top the dip with the remaining 1/2 cup of Colby Jack cheese, the rest of the crumbled bacon, and slices of fresh jalapeño.
Place the bread cubes on a parchment-lined baking sheet. Drizzle with olive oil and season with salt and pepper, then toss to coat.
Place the filled bread bowl and the tray of bread cubes into the oven. Bake until the dip is hot and bubbly and the bread cubes are golden and toasted.
Serve immediately, using the toasted bread cubes for dipping.
