Zest all of the lemons and set the zest aside.
Bring a pot of water to a boil and add the zested lemons.
Cook the lemons for one minute, then remove them from the pot. Reserve the lemon-infused water.
Allow the lemons to cool slightly, then cut them in half and juice them through a strainer into a bowl.
In the same pot, combine the reserved lemon-infused water, sugar, and lemon zest.
Bring the mixture to a boil, stirring to dissolve the sugar.
Add the fresh lemon juice to the pot and bring it to a boil one final time.
Strain the hot cordial through a fine-mesh sieve to remove the zest.
Pour the finished cordial into a clean jar for storage.
To serve, fill a glass with ice, add sparkling or still water, and pour in the lemon cordial to your desired strength. Stir and enjoy.
