To make the sauce, grate one garlic clove into a medium bowl. Add the apple cider vinegar and let it sit for a moment to mellow the garlic flavor.
Grate the onion and add it to the bowl, followed by the mayonnaise, ketchup, and yellow mustard.
Add the minced sweet pickles and a pinch of kosher salt. Stir everything together until well combined. Set the sauce aside.
Divide the ground beef into 6 equal portions.
Take one portion of beef and press it into a thin, even layer on one side of a small flour tortilla, leaving a small border around the edge. Season the beef generously with kosher salt and black pepper.
Heat a skillet over medium heat and add a small amount of cooking oil.
Carefully place the tortilla meat-side down into the hot skillet. Cook for 2 minutes without moving it to allow a crust to form.
Flip the taco over. The beef should be browned and the tortilla should be lightly crisped.
Reduce the heat to low and place a slice of cheese over the beef patty. Cover the skillet and let it steam for about 30 seconds, or until the cheese is fully melted.
Remove the burger taco from the skillet and repeat the process with the remaining tortillas and beef.
To assemble, top the cheesy beef patty with a generous spoonful of the special sauce, shredded lettuce, pickle chips, and diced red onion.
Garnish with sesame seeds, if desired, fold, and serve immediately.
