The Clover Club was an assemblage of bankers, lawyers, and other prominent male professionals who met at the Bellevue-Stratford hotel in Philadelphia beginning in the 1880s and continuing on until the First World War. A veritable boys club, if you will. Like so many organizations of its kind, the Clover Club eventually disbanded, but it's members left behind this little gem for us to remember them by. Many people shy away from egg white these days, but in truth, it lends little to no flavor to drinks. Egg whites are merely used to add body and texture to cocktails. In this one, raspberry remains the dominant flavor but by no means overpowers. Some people like to garnish the Clover Club with a mint leave. Technically that's a Clover Leaf—but we'll let it slide. And gentlemen, this drink may be pink, but remember where it came from.

Charlie Chaplin, undoubtedly one of the most beloved figures in cinematic history and a jack-of-all-trades of the industry, was active in film for over 75 years. The Charlie Chaplin was created when its namesake was at the pinnacle of his career. First recorded in Albert Stevens Crockett's The Old Waldorf-Astoria Bar Book in 1935, this cocktail was served in the original Waldorf-Astoria hotel in New York City up until the 1920s. Due to the tremendous technological advancements of the early 20th century, the Waldorf-Astoria quickly grew outdated and its wealthy clientele drifted elsewhere. Consequently, it was sold and demolished in 1929 to make way for the Empire State Building. The current Waldorf-Astoria was opened in 1931, but the Charlie Chaplin never seemed to make it back onto the cocktail menu. This bittersweet, fruity mixture is sure to satisfy any sweet tooth and pairs great with salty bar snacks.
